What do vegans even eat?

In a primarily omnivore society when someone chooses to become vegan they are sometimes met with shock and lots of questions. These people may wonder, is it hard being vegan?

“Following a vegan diet is not hard, in fact I’ve found it be the simplest thing I have ever done,” Rachel King (10) said.

According to King, she decided to become vegan two years ago after she saw an advertisement on Youtube about veganism. She stated that she felt sick and unhealthy and that she didn’t like the way she looked. The advertisement she saw resonated with her and the next day she changed her diet.

King stated that her usual everyday diet looks something like this:

Breakfast: Green smoothie

  • 3-4 bananas
  • Frozen mango
  • One head of kale

Snack: 1-2 bananas

Lunch: A liter of homemade orange juice

Snack: Kale and tomatoes

Dinner: Large salad

  • 2 heads of kale
  • Lots of spinach
  • One pepper
  • Tomatoes
  • Zucchini
  • Cucumber
  • Romaine
  • Lemon juice
  • Cumin

Not every vegan’s diet looks like this, however because King is a raw vegan. A raw vegan is someone who only eats foods that are not animal by-products and are also raw or uncooked. That is why her diet consists mainly of fruits and vegetables and why sometimes it is hard for her to eat out at restaurants. That does not mean that King never eats at restaurants. Her favorite one is Ecopolitan, a fully raw vegan restaurant in Minneapolis. Her favorite meal there is the nachos which she says that “even [her] non-vegan friends love.”

For traditional vegans eating out is not as hard. Plenty of restaurants popular in the Chanhassen/Eden Prairie area have vegan options.

At Chipotle there are beans, rice, vegetables, chips, sofritas (meat alternative), salsa, guacamole, and tortillas that can be used to make vegan burritos or bowls.

At Noodles & Co., vegans can order any kind of pasta or salad, making sure to request them to be made without cheese or any creamy sauce.

People’s Organic in Eden Prairie also has a lot of vegan options including veggie burgers, salads, vegan chili, and vegan desserts.

Pie Five Pizza recently put vegan cheese on their menu, attracting vegan customers to come and try it. At Pie Five vegans can choose between three crusts – artisan thin, whole grain thin, or gluten free – a variety of sauces and vegetables to make their own vegan pizza.

Outside of the Chanhassen area there are even more options for vegans. Minneapolis is home to many vegan restaurants or restaurants with vegan menu items.

Pizza Luce, a pizza joint with locations in Minneapolis and St. Paul, has two dairy-free cheese options, one being their famous homemade vegan cheese that is made out of tofu and cashews. Luce also has a variety of vegan desserts and meat alternatives, including mock duck which can be served on a pizza or a sandwich.

And for the sweet-toothed vegan there is Glam Doll Donuts. Glam Doll is an award-winning donut shop located in Minneapolis near the Institute of Art and is known for concocting strange donut flavors, some of which happen to be vegan.  

As the years have passed and the number of vegans in the United States has increased so have vegan menu items in restaurants. King says to “[not] let the people around you judge you for what you eating! Just be confident in what you are doing.”

Following a vegan diet may have some benefits also. King stated that “Within a week of being vegan my skin had cleared up, my hair grew, my eyes changed from dark to light, and I was losing weight. I’ve never been more happy in my entire life. I would recommend a vegan diet to those who want to be more happy than they ever thought imaginable.”
